Homemade Hazelnut Creamer

If you’re anything like me, your morning coffee is sacred. For me, it’s not just about the caffeine hit (I only drink decaf coffee), but it’s a ritual.

I stopped buying store-bought creamers a long time ago when I started to pay attention to labels and what is in them. Hydrogenated oils, gums, artificial sweeteners, and mystery “natural flavors.” No, thank you. Not in my kitchen.

That’s why I’m sharing my go-to homemade hazelnut creamer. It’s luscious, naturally sweetened, and infused with real roasted hazelnuts, no weird stuff. Whether you’re trying to eat clean, ditch additives, or just elevate your coffee game, this recipe has your back. Not to mention that hazelnuts are my favorite nuts (childhood nostalgia, they, grow everywhere in Europe and in Poland). They bring subtle, fragrant, creamy, and that toasty warmth that only roasted hazelnuts can bring.

So I did what any determined food nerd would do: I started testing homemade versions of the cremar with hazelnuts. I went full-blown mad scientist in my kitchen until I landed on this: my ultimate hazelnut creamer.

As a chef and nutrition consultant, I’m on a mission to help you create nourishing and flavorful alternatives to processed foods, especially when it comes to things we use every single day, like coffee creamers.

This hazelnut creamer is made with ingredients that support hormone balance, energy levels, and blood sugar control. It’s also completely customizable depending on your diet or preferences. Whether you’re dairy-free, low sugar, or just picky about your coffee (guilty), this recipe can be your new morning staple.

Ingredients for Homemade Hazelnut Creamer

  • Roasted Hazelnuts – These give the creamer its signature flavor. Roasting brings out the nut’s natural oils and deepens the aroma. Think warm, toasty, slightly sweet. Hazelnuts are also rich in vitamin E and healthy fats that support skin health and hormone production.
  • Coconut Sugar – A natural sweetener with a caramel-like taste and a lower glycemic index than white sugar. It’s gentle on your blood sugar, which is especially important for women dealing with energy dips or insulin resistance.
  • Vanilla Extract – Adds warmth and rounds out the nutty flavor. Use real vanilla, life’s too short for the fake stuff.
  • Goat Milk or Milk Alternative – Goat milk is easier to digest for many people and naturally lower in lactose. If you’re dairy-free, coconut milk or a blend of almond and oat milk works beautifully.
  • Homemade Hazelnut Syrup – Made by simmering roasted hazelnuts, coconut sugar, and water until it turns into a sweet, nutty concentrate. Or you buy one on Amazon.
  • Heavy Cream or Coconut Cream – For that silky, luxurious texture. Coconut cream also adds a subtle tropical note and healthy saturated fats that help balance hormones.
  • Ground Cinnamon (optional) – Adds cozy vibes and blood-sugar balancing properties. A little goes a long way.

And here’s a fun coffee connection: Italy, home of the famous gianduja (that heavenly hazelnut-chocolate spread), also has a traditional coffee drink called caffè alla nocciola, which is espresso blended with hazelnut cream. It’s essentially the fancy café ancestor of your morning hazelnut latte.

How to Make Homemade Hazelnut Creamer

  • In a mixing bowl, combine the goat milk, heavy cream or coconut cream. Stir or shake well to combine.
  • Add 4 tablespoons of the homemade hazelnut syrup to the milk and cream mixture. Adjust the sweetness by adding more syrup if desired.
  • Stir in the vanilla extract and cinnamon (if using) for extra flavor.

Ingredient Substitutions

  • Swap goat milk with oat, coconut, or almond milk for a dairy-free version.
  • Use maple syrup or dates instead of coconut sugar.
  • No roasted hazelnuts? Try raw—but the flavor will be milder.
  • Add a splash of hazelnut extract for an extra punch if you’re short on syrup time.

Complete Ingredient Control

Supermarket creamers can be a minefield for anyone mindful of nutrition or food sensitivities. Making your own lets you pick the exact type of milk or plant-based beverage, the sweetener (or none at all), and real hazelnuts or extracts.

Just look at some common additives found in commercial creamers:

  • Artificial flavors
  • High-fructose corn syrup
  • Hydrogenated oils
  • Stabilizers and thickeners
  • Synthetic colorings
  • Preservatives

Chef Angie’s Tips

  • Want a thicker creamer? Add 1 tsp of collagen powder or a little cashew butter to your blend.
  • Strain your syrup through cheesecloth for the smoothest texture.
  • Make a double batch and freeze half in an ice cube tray for coffee-ready portions.

Now, I Know What You’re Thinking…

You’re thinking, “There’s no way homemade hazelnut creamer will froth like the barista blend I buy every week.”

I thought the same. But I recently learned a trick, and it works.

Add a tiny drop of olive oil to your milk before frothing. Just one drop is enough. The result? Frothy, creamy, café-style milk without the gums, soy lecithin, or carrageenan. You’ll be frothing like a pro. And of course my precious kitchen tool- teh frother that I cannot live without. You will have a perfect frothed creamer in no time.

Instructions

Make the Hazelnut Syrup:

  • Make the Syrup: Place the toasted hazelnuts in a food processor or blender. Pulse until they are roughly chopped or ground, but not completely a paste.
    2. In a medium saucepan, combine the water and sugar over medium heat. Stir until the sugar dissolves. Add the chopped hazelnuts to the syrup mixture. Bring to a simmer and cook for 10-15 minutes, allowing the hazelnuts to infuse their flavor into the syrup .
    3. Remove the syrup from the heat and let it cool to room temperature .
    4. Strain the syrup through a fine mesh strainer or cheesecloth into a jar or bottle to remove the hazelnut pieces. Press the mixture with the back of a spoon to extract more syrup.
    5. Stir in the vanilla. Let the syrup cool completely before using.
