  • 3 cups Rice long
  • 5 cups Water
  • 1 can Coconut milk full-fat
  • 2 cans Kidney beans
  • 1 Onion
  • 2 Red bell pepper diced
  • 6 cloves Garlic
  • 1 tbsp Olive oil
  • 2 tbsp Thyme fresh is best
  • 2 tbsp All spice ground
  • 1 tbsp Grated ginger
  • 2 Scotch Bonet pepper or habanero (1)
  • 3/4 tbsp Salt
  • 1 bunch Scallions
  • 1/4 cup Cilantro chopped

Instructions
