Easter is one of my favorite holidays to cook for. Spring finally shows up, the table gets lighter and brighter, and we get to keep tradition without feeling like we need a nap halfway through the meal. I love Easter food and spring dishes that feel celebratory but still fresh, balanced, and deeply satisfying.

As a chef and nutrition consultant, I always see Easter as the perfect moment to let seasonal produce shine while gently updating traditional recipes. All the eggs, spring peas, sweet pea, radish, asparagus, early greens, leek, and butterhead lettuce. Spring brings more green to the table, lighter meals and less heaviness, and plenty of dishes that make you feel good. You can get creative and create a delicious vegetable dish for your Easter table.

I know I know. My husband was very eager to try it, but after he did, he actually really liked it. It is something to get used to. It is a nostalgic Polish favorite for me and is high in protein. Served cold, always with apple cider vinegar, tart’s refreshing and elegant in that old-school Eastern European way.

One of my favorite Polish soups, tangy, hearty, and traditional, defines Polish Easter. Great for gut health. It’s bold in flavor and incredibly satisfying without relying on dairy cream.

We Poles love pork. My favorite cut was always lean pork, such as pork tenderloin. This dish has a sharp Dijon kick, is juicy, easy to make, and works for weeknight dinners as well as fancy dinners.

One of the best memories from my childhood. The pâté is soft, savory, and gently spiced, and perfect for Easter breakfast or brunch. It pairs beautifully with pickles and fresh bread.

A traditional holiday vegetable and egg salad, creamy yet full of root vegetables, this salad shows up at every Polish celebration for a reason. It’s comforting, familiar, and balanced.
