Pumpkin Pie Old Fashioned Cocktail

For many, pumpkin pie is the ultimate symbol of autumn—a treat that graces tables year after year, bringing family and friends together. But what if you could take the essence of that beloved dessert and turn it into an elegant, cozy cocktail?

So, I’m not a bourbon girl, but my friend made this cocktail at the party, and I decided to try it, which was delicious. I made one myself for my husband since he likes bourbon.

This pumpkin pie old fashioned is a sophisticated sip that combines the warm, spiced flavors of pumpkin with the smooth richness of bourbon. It’s the kind of drink you’d imagine sipping by a crackling fire, surrounded by the glow of candlelight (aka romantic too!). Whether you’re hosting friends for a fall or winter gathering or simply unwinding after a long day, this cocktail feels indulgent yet approachable, making it the perfect way to toast the season.

Why Make a Pumpkin Pie Old Fashioned?

For me, this pumpkin pie old fasioned cocktail takes the nostalgia of pumpkin pie and transforms it into a grown-up treat, perfect for anyone who loves the flavors of fall. It’s a way to impress guests with something unique and delicious, yet it’s simple enough to prepare with ingredients you likely already have in your kitchen (I always have some pumpkin purée and pumpkin butter in my pantry).

Instead of pulling out the pie dish and preheating the oven, this recipe lets you enjoy those same comforting flavors in a fraction of the time. Plus, it’s versatile; the pumpkin pie syrup can be used for more than just cocktails—try it drizzled over pancakes or stirred into coffee.

Ingredients for the Pumpkin Pie Old Fashioned

Pumpkin Pie Syrup Ingredients

The pumpkin pie syrup is the heart of this pumpkin pie old fashioned cocktail:

  • Pumpkin Butter: One cup of this smooth, spiced spread is the base for that signature pumpkin flavor. You can grab it at the store or whip up your own from scratch.
  • Maple Syrup: Maple syrup adds a natural sweetness that complements the pumpkin without overpowering it.
  • Water: A simple yet essential addition to keeping the syrup consistent—thick but pourable.

This trio makes a sweet, earthy syrup packed with autumn essence.

Ingredients for Pumpkin Pie Old Fashioned

  • Bourbon: The bold, oak-forward flavor of bourbon stands up perfectly to the sweet and spiced pumpkin pie syrup.
  • Pumpkin Pie Syrup: One ounce of the homemade magic you just created ties everything together with the flavors of fall.
  • Bitters: Add two or three dashes of Angostura or orange bitters to bring balance with a hint of spice.
  • Large Ice Cube: This keeps your drink cold without watering it down too quickly—essential for sipping.
  • Garnishes: A cinnamon stick and a star anise pod are the cherry on top, adding aromatic flourish and visual beauty.

This combination ensures every glass delivers warm, festive flavors you won’t forget. Ready to give it a shot?

Making the Pumpkin Pie Syrup

Mixing the Syrup

To make the syrup, grab a medium-sized saucepan—your soon-to-be flavor factory. Combine these simple ingredients:

  • 1 cup of pumpkin butter (store-bought works great!) or you can make your own homemade pumpkin puree from a real pumpkin by roasting, then pureeing it in the food processor,  and adding apple cider, vanilla, maple syrup, pumpkin pie spice, and cinnamon. You can also use canned pumpkin puree.
  • 1 cup of water for the perfect consistency.
  • 3 tablespoons of maple syrup for that natural sweetness.

Heat the mixture over medium heat, stirring occasionally to blend everything together. You’ll notice the pumpkin butter melting into a velvety mixture as it warms up. As the syrup heats, it releases an irresistible aroma that screams “fall.” Once everything is smooth and slightly thicker, your syrup is done. Don’t let it boil—keep the heat gentle.

To make this cocktail, start with a pumpkin pie syrup that blends the sweetness of pumpkin butter with the warmth of maple syrup. The syrup becomes the heart of the drink, bringing all the rich, spiced notes you’d expect in a slice of pumpkin pie. Pair it with bourbon for a balance of sweetness and depth, and finish it with a dash of bitters to round out the flavor. A cinnamon stick and anise pod make for the perfect garnish, adding a festive touch to your glass.

Storing the Syrup

Once your syrup has cooled to room temperature, transfer it to a clean, airtight jar or container. Mason jars work beautifully here, giving you a rustic storage solution. Store it in the fridge, where it will keep fresh for up to two weeks. The syrup will thicken slightly as it chills, so give it a good shake or stir before each use. It’s ready to elevate your Pumpkin Pie Old Fashioned, plus other fall-inspired treats, like pancakes or coffee.

Serving Suggestions

Presentation matters as much as taste when it comes to cocktails. Here are some serving tips:

  • Choose the Right Glassware: A classic rocks glass or an old-fashioned glass is ideal for this recipe. Its sturdy design mirrors the drink’s robust character.
  • Garnish with Style: A cinnamon stick and star anise add visual flair and a burst of aroma. For an extra touch, lightly torch the cinnamon to amplify its scent.
  • Add Ice Elegance: Use a single large ice cube for minimal melting. Clear ice makes your drink feel like it came straight from a high-end bar.
  • Optional Rim: Coat the rim with a mix of fine sugar and cinnamon for added sweetness and style.

Alcohol Alternatives: Not into alcohol? No problem! The Pumpkin Pie Old Fashioned can be made without alcohol as a fall mocktail. You can add:

  • Apple Cider: Swap out bourbon for spiced apple cider. Complements the pumpkin syrup and enhances the fall vibe.
  • Non-Alcoholic Whiskey Alternatives: Many brands now offer whiskey substitutes that mimic the oak-flavored warmth of bourbon. .
  • Spiced Tea: Brew a chai tea and use it as the base for your cocktail. The spices will echo the taste of pumpkin pie.
  • Club Soda: Add club soda or mineral water to turn your Pumpkin Pie Old Fashioned into a spritzer.

This pumpkin pie old fasioned cocktail is easy to make, looks and tastes fantastic and will impress your guests during a Thanksgiving gathering, Christmas dinner, or while relaxing after raking leaves on a crisp fall afternoon. So, pour yourself a glass, take a sip, and savor the best of the season. Cheers!.

Ingredients

Pupkin Pie Syrup

  • 1 cup Pumpkin butter store-bought
  • 1 cup Water
  • 3 tbsp  Maple syrup

Cocktail

  • 1.5 oz Burbon
  • 1 oz Pumpkin pie syrup
  • 3 dashes Angostura or orange bitters
  • Ice cubes
  • Cinnamon stick and anise for garnish

Instructions

  • Make the Pumpkin Spice Syrup: In a small saucepan, combine the pumpkin butter, water, and 3 tablespoons of pure maple syrup. Heat until the mixture becomes smooth and pourable (about 10 minutes). Strain through cheesecloth or a fine mesh strainer while still warm. Allow the syrup to cool. This is enough syrup to make about 8 cocktails.
Assemble the Cocktail: Place a large ice cube in a rocks glass. Pour in 1 ½ ounces of bourbon. Add 1 ounce of the pumpkin spice syrup, along with a couple of dashes of Angostura bitters. Stir thoroughly to combine.
Finish with Garnish: Garnish with a star anise and a cinnamon stick.

Notes

  • Any bourbon can be used.
  • Large ice cubes are best because they will melt slowly and prevent dilution of your cocktail.
  • A sugared rim can be added to the glass. I coated the edge of the glass with a little maple syrup and added brown sugar.
